Feesh tacos with pico de mango

Pizza Frittata

I suppose now might be a good time to mention how much I love b-fast... It's pretty much my favorite meal of the day; I will eat breakfast foods any time I see fit. I would rather wake up extra early or even be late to work than miss b-fast. With that said, this is my frittata recipe. If you don't know a "frittata" is, it's like an Italian-style open-faced omelet. A lot of times people bake them but I don't have a cast-iron pan so I figured out how to make them just using the stove. The best part about it is you can add whatever ingredients you want, such as potatoes, tomatoes, cilantro, mushrooms, sausage, feta cheese, etc.

Mongolian-style beef lettuce wraps...

This is one of my FAVORITE things to make. Honestly, if you don’t like beef (I try to only eat it every other week) chicken and salmon both work very well with this recipe too! And if you wanna be creative and add diff veggies, just sauté them separately. I’ve tried adding mushrooms, carrots, sweet potatoes, broccoli, red bell peppers and green beans. Fuggin’ FRENCH toast! (with blueberry sauce)

I don't know why but I always have a craving for French toast on Sunday mornings. And of course I quote 40-Year Old Virgin every single time. This is the classic recipe for French toast with hot blueberry sauce I have sorta modified over the years. It's also perfect before a big exam or important meeting (blueberries are brain food, in case you didn't know and the fiber from the wheat flour helps keep you full until lunch). Easter Capirotada

If you feel the need to google it, I will save you some time... According to wikipedia,Capirotada (pronounced: kä-pē-rô-tä-thä) is a "common Mexican bread pudding that is traditionally eaten during Lent. It is generally composed of toasted french bread soaked in a mulled syrup, sugar, cheese, raisins, and walnuts." My mom and my grandmother make it every year during lent and for Easter. Last week, I attempted to "guess" the recipe on my own because I had a craving. Anywho, so it wasn't half bad. I had my familia try it and made a few tweaks for the final recipe. Sexy Mint-Feta Venison Meatballzzzz

I got this recipe from a fellow foodie-friend of mine. I **highly** recommend these sexy meatballz. Surprisingly, the mint compliments the spice of the red pepper flakes, bell pepper AND the venison sausage. At least, in my opinion. However, the recipe will work well with any ground meat. Side note: They're "sexy" because of the *ahem* playlist indicated in the ingredients. Have a glass of wine (or two) while preparing and baking the meatballz. Skinny Chick Parm

Okay so I got the idea to make Chicken Parmesan using Japanese Panko bread crumbs and baking it INSTEAD of frying it from Cook This NOT That. (Side note: I highly recommend this book because it is very user friendly and full of fun facts). Honestly, it's the best chicken parm I have ever had. Better than Olive Garden (OG)! I highly recommend trying it for a cooking date and family gathering because it pretty much never fails and the recipe is so classic. Med Pizza on April Turd's Day

So I have been told

That I should start a food blog. Maybe it's all the pictures I post on Facebook. Honestly, I do not think I am that great of a cook. I LOVE to cook but I know I have a lot to learn. I figure the best way to learn is to cook, try new recipes, let others taste and get feedback. Anyway so this is my Food Blog!

A couple of things I would like to add:
1) I am by no means a "chef". All I do is cook every-day meals to have at home with friends and family. So don't expect me to make my own pizza dough or create real elaborate dishes.
2) I am a health nut. I am all about saving calories by preparing meals at home. When possible, I will add recipes that I "healtified" from a restaurant meal and indicate possible cals and fat grams saved.
3) Similarly, I started cooking because I am a broke-ass college student and I definitely do not have time to waste. For that reason, if there are any time- and money-saving measures I can add to my recipes I will definitely do so. I am not opposed to buying a fully cooked rotisserie chicken from the grocery story and using it to make 3-4 different meals.

That's about all I have for now. Just trying to share my love for food and health :)
